Steaks run from an eleven-ounce sirloin to a twenty-five-ounce Cowboy ribeye, with prime rib slow-roasted in sea salt and cracked pepper. Ribs come dry-rubbed by the half or full rack. Chicken is marinated in lemon, lime, orange, cilantro and tequila before it hits the fire. Start with steak on a stick, shrimp jammers or Texas nachos.
