Inside the restored Hotel DeFuniak on East Nelson Avenue, Cafe Nola brings Louisiana cooking to downtown DeFuniak Springs. Chef Ernie, a native Louisianan working from family recipes, sends out gumbo, etouffee, Bienville and the kitchen's chicken and andouille sausage jambalaya daily, alongside beignets, sandwiches, flatbreads, platters and steaks. Breakfast, lunch and dinner all run here, and the adjoining Bourbon Street Lounge handles cocktails, cigars and later evenings. The room leans dim and old-fashioned, a deliberate nod to the French Quarter and to Casablanca. Catering, plated dinners and buffets are handled in-house too.
