A Cuban food truck working the Treasure Coast, run by Jose and Alina, both born and raised on the island and cooking the dishes they learned from their mothers and grandmothers. Lechon asado is the centrepiece: pork marinated twenty-four hours in the family mojo, then slow-roasted for hours until it pulls apart. Ropa vieja is hand-pulled and stewed all day in a fragrant sauce. The Cubano is pressed fresh to order, Havana style. Croquetas come out with a crisp golden crust, and black beans simmer for hours rather than minutes. No fillers, no corners cut. The name Candela means flame.
