Carrot Express started in 1993 inside a Miami Beach gas station, founded by Mario Laufer, and has grown into a fast-casual fixture across the city. Its Miami counters serve all-day breakfast, from the Scrambled with pasture-raised eggs, avocado and sourdough to croissant eggwiches and crunchy avocado toast under feta and microgreens, then move to salads such as La Mexicana and Green Goddess, poke bowls, Mario's Favorite chicken bowl over cilantro brown rice, wraps and salmon burgers. Cold-pressed juices, wellness shots and smoothies fill the cold case. Diners consistently say healthy food rarely tastes this good. Signature carrot cake closes it.
