A Spanish dining room on Southwest 5th Street in Pembroke Pines where live flamenco and shared plates set the pace. Tapas run through garlic shrimp casserole, Andalusian fried calamari, Navarra chistorra sausages in wine sauce, truffled broken eggs, and boards of Iberian ham and manchego. Paella is cooked to order in Valencian bomba rice, two people minimum, forty-five minutes: seafood with lobster tail, campesina with chicken and pork, black rice with squid. Elsewhere, fabada, oxtail in red wine, grilled Galician octopus, salt-baked sea bass. Suckling pig Segovian style needs two hours' notice. Finish on Santiago cake or burnt cream custard.
