The Apalachee Parkway sibling that spent a year rebuilding its menu around Latin America, featuring a different country's dish each month. Ceviches lead: a tropical one with citrus-marinated fish, avocado and fried plantain chips, a Peruvian one with leche de tigre, sweet potato and corn. Paella comes in Valencia rice with clams, mussels, calamari and shrimp in shrimp stock. Elsewhere there are quesabirrias, chile relleno over seasoned rice, a Texas burrito, grilled salmon, rice bowls and Latin salads. Desserts run tres leches, flan and guava pastries.
