Casey Key Resorts keeps its dining at the mainland property, where Chef Rolf's Continental Kitchen and an adjoining tiki bar are open to locals as well as guests. The cooking marries Swiss-European training to Gulf seafood. Escargot, she-crab soup under puff pastry and grouper ceviche start; bronzed tripletail, herb-baked flounder in key lime sauce, New Bedford scallops and steamed snow crab follow, served with cilantro-lime jasmine rice. A Swiss section holds schnitzel, schweinshaxe and jaeger-style pork cutlets. Prime rib and filet mignon anchor the steak side. Breakfast every day, Sunday brunch, and live music at the tiki bar most evenings.
