Charleys works out of Miami's big shopping malls, where the griddle sits in full view and the line moves fast. Steak is chopped, cheese folded through it, the roll toasted before anything else happens. The lineup covers the Philly Cheesesteak, the Old School and the Bacon 3, plus chicken builds including Chicken California, Chicken Buffalo and Chicken Teriyaki. Sides mean original fries, cheese fries, or loaded fries buried under steak. Wings come classic or boneless with Korean BBQ, mango habanero and hot honey among the sauces.
