Chart House opens at four on Gulf of Mexico Drive, with happy hour pricing on selected appetizers, wines and cocktails, and a fixed-price early dining menu before six. Coconut crunchy shrimp starts most tables, followed by cedar plank salmon, broiled Australian lobster tail or the herb crusted prime rib. Lighter lounge fare runs alongside the dinner menu. The hot chocolate lava cake needs half an hour, so order it early. Book the terrace, let dinner run long.
