CHIEF'S CANTINA – Restaurant

A family-run Mexican food truck working the Tampa Bay area from Hillsborough across to Pinellas, run by Marcos and Tracy Rios and a regular at public events including Tampa's Taco Fest at Curtis Hixon Waterfront Park. The everyday board is short and built around a house queso: nachos, soft corn tacos with cilantro and onion, and quesadillas folded with Chihuahua cheese, each with a choice of protein and chips fried in the truck. Event menus stretch further, into frijoles a la charra, queso fundido with chorizo, street corn, mole, enchiladas, tamales and crisp tacos de birria filled with melted cheese.
