South Broad Street, four o'clock, and the grill is already going. Chop Block Grill is a small dinner-only steakhouse in Brooksville that grinds its own prime beef in house and cuts fresh fish daily. The board leans on a sixteen-ounce prime ribeye chosen for marbling, a bourbon chicken plated with pina colada rice, and gnocchi in a sage beurre noisette cream with pan-fried prosciutto, grilled mushrooms and parmesan. The prime butter burger uses house-ground ribeye, house-made cheese and house-made pickles, with rosemary fries. Reservations are recommended, dinner service runs Tuesday through Saturday evenings only, and the small room fills fast.
