Order the criollo standards: pollo guisado, carne frita, chicharron de pollo, chuleta frita, chivo guisado and mofongo relleno, all built on rice, beans and fried plantain. Sunday only, the kitchen ladles out sancocho grande. Appetisers run to beef and chicken empanadas, garlicky tostones, sweet maduros and a passion-fruit shrimp ceviche.
