Inside the THesis Hotel near the University of Miami, The Collab plates Mediterranean-Asian cooking under chef de cuisine Peiyuan Nung. Small plates set the register: avocado hummus with cancha corn, baba ganoush from the wood oven, Faroe Islands salmon tartare, grilled Spanish octopus, blue crab croquettes, corn ribs. Mains run to branzino, wild-caught Ora King salmon, New Zealand lamb chops, prime picanha and a 48oz tomahawk built for sharing. There are wood-fired pizzas, lobster and shrimp gnocchi, lobster kamameshi. Breakfast runs daily; brunch, happy hour and dinner fill the rest.
