The Columbia has stood on St. Armands Circle long enough to be the oldest restaurant still trading in Sarasota, an outpost of the Tampa original that opened in Ybor City in 1905 and remains in the same family. Mediterranean-tiled dining rooms give onto a sidewalk patio a short drive from Lido Beach. The kitchen holds the line on Spanish and Cuban classics: the 1905 salad tossed at the table, Spanish bean soup with garbanzos and chorizo, the original Cuban sandwich, paella a la Valenciana, lechon asado, boliche criollo and flan. Sangria arrives by the pitcher. History that still cooks properly.
