CONRAD ORLANDO CEIBA – Restaurant
Ride the lift to the roof of Conrad Orlando and Mexico opens out over Evermore Bay. Ceiba builds its cooking around salsas, masa and mole, and the salsa service alone is a study: macha with peanuts and sesame, borracha finished with mezcal, Yucatecan sikil pak thick with pumpkin seed. Guacamole arrives crowned with blue crab and smoked trout caviar. Then carne apache, New York strip tartare under truffle-chipotle dressing; black aguachile of octopus; hamachi ceviche with green apple and jicama; a ribeye huarache on masa flatbread. Agave-forward cocktails run alongside. Dinner here is a long, deliberate and thoroughly considered evening.
