CVI.CHE 105 CORAL GABLES – Restaurant

The group's fifth restaurant sits on Palermo Avenue in Coral Gables, and it plays the Peruvian repertoire with a little more polish. Chef Juan Chipoco's kitchen sends out tiraditos in fine slices, hamachi with ginger and soy, salmon bathed in passion-fruit leche de tigre, before ceviches ranging from the everyday classic to the scallop, tuna and salmon Concha de sus Mares. Causas arrive cold and bright, crab and avocado under acevichada mayo. Anticuchos, octopus in anticuchera sauce and a long list of Nikkei rolls fill the middle. Diners consistently mention the freshness of the fish. Pisco cocktails are poured throughout.
