It began as a folding table at Safety Harbor's Third Friday market, moved into a church bus turned food truck, graduated to a custom trailer, and now holds a permanent room on Broadway in Dunedin. Everything is built on large handmade gluten-free corn tortillas. Brisket barbacoa is slow-cooked fourteen hours, then finished with melted Chihuahua cheese, jalapeno cole slaw and creamy avocado aioli. Doug's Chicken is chili-lime grilled with lime lettuce and Mexican sour cream; De la Tierra keeps it vegetarian on poblano, sweet corn and red onion. Bowls, nachos and quesadillas take the same three fillings. Catering still travels.
