The brisket barbacoa gets fourteen hours of slow cooking before Chihuahua cheese, jalapeno cole slaw and avocado aioli go over the top; Doug's Chicken arrives chili-lime grilled under shredded lime lettuce and Mexican sour cream; De la Tierra skips meat entirely for grilled poblano, sweet corn and red onion.
