El Indio Tacos y Snacks began in 1996 at a Palmetto soccer park, where Rosario Ulloa sold homemade Matamoros-style snacks out of a cooler between games. Three decades later her son Miguel and his wife Yesenia run the operation as a food truck and catering outfit across the Tampa Bay area, with their own son now working alongside them. The menu keeps the street-food spirit alive: tacos, tortas, quesadillas and nachos, all built around the recipes that started the business. It caters private events and shows up at public gatherings, carrying a family story that predates most Tampa Bay competitors.
