El Roi Ethiopian Food operates as a food truck across Southwest Florida, billing itself as the region's first dedicated source for Ethiopian cooking rather than working from a fixed dining room. Injera, the spongy teff flatbread, anchors the menu and doubles as both plate and utensil for tibs, sambusas and lentil stews spiced in the traditional style. Much of the menu skews gluten-free and vegetarian by default, a byproduct of Ethiopian cooking rather than a special accommodation. The truck follows a rotating schedule of breweries around Fort Myers and the surrounding coast, posting each stop and its hours in advance.
