The kitchen brines chicken daily, sourced locally and never frozen, then hand-batters each piece before frying -- no heat lamps holding anything. Tenders and wings come original or tossed in a signature sauce, alongside drumsticks and thighs brined the same way; sides run to baked mac and cheese and onion rings, added after soft-opening customers asked.
