Gainesville's vegan po'boy shop, run on South Main Street by John Mamo and Timothy Hutchens, who started as a food truck and built the brick-and-mortar afterwards. The cooking is Cajun straight through, just without the animals: breaded and fried seitan, cornmeal-crusted tempeh, red beans and rice, seitan tenders with house vegan ranch and fries, and the Catfish'd Sando that most people order first. Everything is made in house. Laissez les bons temps rouler is the motto, and the four-day week suggests they mean it. Louisiana heat, plants only.
