Puerto Rican cooking done with intent, from a Central Florida group led by chef Jose Antonio Martin Grau. Mofongo is the centrepiece - nine versions of the mashed-plantain signature, at its best relleno with shrimp or churrasco in garlic cream. Beyond it: chuleta kan kan, a single pork chop carrying loin, belly and rib with the skin left crackling; jibaro rice loaded with longaniza, pork, chicken and steak; seafood rice, bacalaitos, pernil, alcapurrias. Diners come back for the garlic sauce and the sheer scale of the plates. Comida boricua, no apologies.
