On Thomas Drive since 1995, cooking Gulf seafood with a Cajun accent — char-grilled oysters, Bang Bang tacos of crisp fried shrimp, blackened redfish over egg-noodle alfredo with sundried tomato butter, Apalachicola oysters when they are running. Out back, Fred's Hangout is a covered pavilion with its own bars, live bands and more than thirty taps poured tall and cold. No dress code, ever. Prime rib nights and all-you-can-eat seafood keep the midweek ticking over. Panama City Beach has changed a great deal since 1995. Fred's has not needed to.
