Hot Pie Pizza turns out New York-style pies from an eighty-year-old family dough recipe - thin, blistered at the edge, crisp underneath, finished with fresh basil. Beyond the pizza there are filet mignon steak bites, oven-roasted chicken wings, cheeseburgers, salads, sandwiches and pasta, plus wine and a game on somewhere in the room. Transplanted New Yorkers are the toughest audience and turn out to be the loudest converts; the char and the sauce come up again and again. A slice shop with a serious oven behind it.
