At Brownwood, a bright fast-casual counter serving Hawaiian-style poke bowls assembled in front of you. Bases first, then proteins — ahi tuna, spicy tuna and Korean BBQ chicken among more than eight — then toppings by the dozen and house-made gluten-free sauces. Sushi in a bowl is the shorthand, and it fits. Dole soft-serve is the reliable finish. It was opened in December 2021 by two couples who live in The Villages, and has settled in as the lighter option on a square not short of heavier ones. Order once, then spend later visits refining it.
