The tonkotsu here is cooked down until it turns creamy and thick, then loaded with Japanese pork-belly chashu, half a marinated egg, naruto, bamboo shoots, corn, scallion, red onion and a tangle of shredded chili. The black tonkotsu takes the same bowl somewhere darker with black garlic oil. Gyoza and takoyaki cover the wait; boba covers the rest. It is a casual ramen-and-boba stop on San Jose Boulevard, built around the bowl rather than the theatre. Go for the black garlic. Do not skip the egg.
