Jacksonville's first dedicated omakase counter, tucked into a small suite off Deer Lake Court and run as a seated, chef-led progression rather than a sushi bar you drop into. Courses rotate with the season: hamachi kama over burnt corn husk oil, A5 wagyu gyoza in black garlic ponzu, brown butter shima aji with green tea ponzu, otoro tartare with uni and caviar. There is a dining room and a bar pouring sake and Japanese whisky alongside it. Guests consistently single out how much the chefs explain as they go. Reserve; walk-ins are welcome but optimistic.
