JPAN keeps two Sarasota rooms - one at Shops at Siesta Row on South Tamiami Trail, one out near University Town Center - and both run the same playbook: a proper sushi bar with a grill behind it. Pork dumplings and shrimp tempura to open, salmon carpaccio if you want the knife work on display, then rolls like the Volcano and the Tampa. Wagyu nigiri turns up as a special. There is a happy hour, and a full lunch service at Siesta Row. Polished, never precious.
