Nikkei cooking is Japan by way of Lima, and Katana runs it straight down the middle on Weston Road. Raw fish is the point: tiradito de pulpo with avocado and black olive aioli, tiradito de tuna with mango and huacatay, a three-chile ceviche of white fish and grilled octopus swimming in leche de tigre. Sushi rolls and sashimi round it out. Regulars single out the octopus and the tuna, and the room stays warm and busy rather than hushed. Bold plates, generous acid, no ceremony.
