Coral Gables has plenty of ambitious rooms; few are this small or this deliberate. Kojin sits on Ponce de León, where Pedro and Katherine Mederos cook a Japanese-inspired, seasonally driven menu built on local sourcing — an à la carte list alongside tasting experiences, with Katherine running pastry and operations. The sustainability commitment is not decorative: the kitchen works towards zero waste. Dinner is Wednesday to Saturday, brunch on Saturdays, and the room is intimate enough that booking ahead matters. Fine dining without the starch, and hospitality that reads as personal rather than performed.
