Kolapasi runs a see-it-then-order counter: the curries are on display, you choose a base, pick what goes over it and set your own spice level, and the bowl is built in front of you in a couple of minutes. The cooking itself is slow — long-simmered curries, no added MSG, artificial colours or preservatives — even though the service is not. The Saint Augustine canteen is one of a spread running from the Carolinas to Australia. Fast-casual that does not taste like a compromise.
