Eight seats at a counter on West Platt Street, three nights a week, booked a month ahead — Koya is the most deliberate room in Tampa and it never raises its voice. The tasting menu moves with the season and with whatever Toyosu Market sends that week: bluefin and uni flown in, Spanish turbot in a tomato and miso emulsion, A5 olive wagyu finished with fried capers and aged parmesan. It has held a MICHELIN star since 2023. Small room, long memory, no wasted gestures.
