Cuban Hialeah meets the Italian kitchen, and the seams barely show. La Romanita builds carbonara on smoked Cuban pork chop and cumin instead of pancetta, tops a thin, crackling house-dough pizza with vaca frita, and sends out a crudo trio of branzino, tuna and salmon under spicy oil and passion fruit. Handmade pastas anchor the rest; a boutique wine list runs to eighty-odd bottles. The room seats sixty-five with an open kitchen and a patio, live jazz and trova on the good nights, and a bar that keeps going until one. A genuinely local idea, executed with real technique.
