Nha Hang Chay Hoa Sen on Park Boulevard has been doing plant-based Vietnamese long enough to make the rest of the category look new. Everything is vegan, and none of it announces itself as a substitute: spring rolls, banh mi, banh xeo, hot pot, stir-fries and a pho the kitchen has clearly spent years tuning, plus fried rice and a Beyond burger for the reluctant. Weekday lunch runs as an all-you-can-eat buffet, with a full-day version once a month. Diners keep noting how little they miss the meat. Generous, cheap and quietly confident.
