LUCKY CAT DIM SUM – Restaurant

Chef Guorong Fan's dim sum room in Mandarin, where the number eight runs through the name and the decor and the carts of small plates keep arriving. Shumai and steamed, fried and baked dumplings form the backbone; the taro Lucky Cat bun and the red bean piggie bun are the ones people photograph, and the Everything Bun borrows from Fan's New York years. Fried rice and stir-fried noodles round it out, with rotating specials that wander toward chicken and waffles. Cantonese technique, plainly, with a sense of humour bolted on.
