MODU RAMEN – Restaurant
Chef Dongil Kim opened Modu Ramen on Baymeadows Road in 2019 after two decades cooking Japanese noodles, and the tonkotsu broth still gets an eighteen-hour double boil before it ever reaches a bowl. The range is wide: shoyu, spicy miso, a spicy curry tonkotsu with real heat, tantanmen in a creamy spicy pork-bone broth, and a vegetable ramen for anyone skipping the pork altogether. Gyoza, chicken karaage and honey Modu wings cover the sides, with tempura udon for the noodle-curious. Regulars come several times a month and talk about consistency rather than novelty. Lunch and dinner, both.
