NAOE sits at the Courvoisier Centre on Brickell Key and serves a single nightly omakase from Kevin Cory, whose family in Fukui runs the Nakamura sake brewery and who makes the restaurant's own soy sauce. There is no ordering to be done: the meal arrives as the chef built it that day, starting with a bento box and moving through nigiri cut to order. Reservations are required, well in advance, and the room is quiet enough to hear the knife. Miami's original omakase, still the benchmark.
