Planta's South Beach dining room is plant-based cooking with no interest in apologizing for it — a bright, plant-filled room on Lincoln Road where the kitchen puts watermelon in place of tuna on nigiri and gets away with it. The menu runs through crispy cauliflower tots, coconut ceviche, truffle mushroom pizza, udon noodles and a burger that converts skeptics, with a full cocktail program to match.
