Pop's Cocina is the kitchen arm of the Pop's Subs operation in Miami, working out of a truck as much as a storefront and turning up wherever the crowd is - the Yards Pickleball Club among them. The cooking is American with a Latin push behind it, and the chopped cheese fries are the thing people track the truck down for. Same family, same sandwich-shop instincts, different set of wheels.
