Rokhat Kosher Bakery has kept Bukharan baking alive on Austin Street since brothers Roshiel and Rafael Samekhov arrived from Uzbekistan in 1992. The centerpiece is a walk-in tanoor oven the size of an industrial refrigerator, where disc-shaped lepeshka bread bakes against the wall the way it has for centuries. Samsa - flaky meat hand pies, including a pumpkin version - come out all day, alongside apricot strudel, apple turnovers and trays of pastries. Rego Park treats it as a gathering place as much as a bakery. Central Asia, in Queens, at eight in the morning.
