SKYLINE CHILI – Restaurant

Cincinnati's most argued-about export, served the way locals insist on it: a fine-ground, cinnamon-and-cocoa-spiced chili ladled over spaghetti and buried under a haystack of shredded cheddar. Order it by number - three-way with cheese, four-way with onions or beans, five-way with both - or go for the cheese coneys, small hot dogs under the same chili and cheese. Oyster crackers and a squeeze bottle of hot sauce come standard. Regulars treat it less as a meal than as a ritual, fast, cheap and gone in ten minutes. Not chili as Texas knows it, and proudly so.
