The counter opens early and stays busy: roast pork with the crackling still on it, pan con lechon stacked and pressed, and a rotating set of traditional rice dishes that sell out on their own schedule. Fresh fruit juices get made daily. It's fast-casual by format - order, sit, eat - but the food is the slow kind, and the marketplace side lets you take some home.
