The original Carlo's, on Homestead Avenue in West Perrine, has been frying seafood for South Dade long enough to have raised regulars from childhood. It opens late morning and runs to nine most nights, ten at the weekend, closed Sundays and Mondays. Conch fritters and fried conch lead, backed by fried clams, shrimp, whole fish and souse, with combination trays stacking fish, conch and shrimp together. A short list of sides and cold drinks rounds it out. Diners come back for the freshness and the speed, and greet the counter staff by name. A neighbourhood fry house, unchanged and unbothered.
