TACOTOMIA – Restaurant
Tacotomia is Chef Karla Hoyos's argument for southern Mexican cooking done the long way, with counters at The Doral Yard on Paseo Boulevard and at Julia & Henry's in downtown Miami. The tortillas are nixtamalized in house, which is the point the kitchen makes loudest, and everything sits on top of that: tacos de birria, machete tacos folded to arm's length, cochinita pibil pulled from Yucatan tradition. Hoyos brought the recipes from Catemaco, Veracruz. The house line - real tacos and not chingaderas - is less a slogan than a warning to anyone expecting a hard shell. Miami's most serious taco counter.
