Gainesville's Tijuana Flats does what the chain has done since 1995: fast counter Tex-Mex with a hot sauce bar you are encouraged to raid. Chimichangas, quesadillas, Bangin Chicken burritos and bowls, Cheesy Steak Flautas and a Street Taco Trio make up most of the order board, with chips and queso arriving first. It is a student-hours kind of room - bright, loud, quick to turn over. Diners repeatedly single out the portion size and a counter crew that stays friendly when the line is out the door.
