A small rotisserie counter in Mitzpe Ramon, where three birds turn slowly in the machine until the skin goes deep gold. That is the whole proposition and it holds up — chicken roasted properly, not dried out, sold by the plate or wrapped for the road. Sides do the rest of the work: rice, beans in red sauce, beans with garlic, roasted vegetables. Desert-town food with nothing to hide behind. Order half a chicken and eat it in the car park; nobody will judge you.
