Valkyrie Eatery is Chef Osman's sushi-and-ceviche room on West Flagler Street, a short, sharply focused menu built for sharing. Nori-shell sushi tacos come stacked with steak and shrimp or salmon and kanikama; ceviches arrive in a spicy basil-lime aioli with tostones alongside; tuna tataki and a tricolor sashimi platter get ponzu and truffle oil. The house rolls run playful, from the pineapple-and-hamachi Inter Miami to a fully vegan Grinch. Yakisoba and fried rice cover the comfort end, and dessert is made in-house: caramel flan, or a guava and cream cheese roll under fresh mango.
