In downtown Delray Beach, Yama works both sides of the kitchen: a sushi bar sending out nigiri tastings, chirashi and tuna tartare, and a hot line handling spicy pork bulgogi and Panang curry in portions bigger than the room suggests. The rolls are where the imagination goes — the Special Yama, the 2nd on 2nd, hamachi with jalapeño. Yakitori opens a meal well. Diners come back for the freshness of the fish and the care in the plating, and regularly note how fast the food lands even when every table is full. Indoor seats, a few outside, cocktails worth lingering over.
