Chef Pablo Zitzmann's dumpling pop-up grew into a thirty-seat room on Alhambra Circle — dim, quietly theatrical, and working from a short menu that turns over constantly. Dumplings are only part of it: har gow filled with shrimp and lobster under a near-translucent skin, wontons of chicken thigh floating with oyster mushrooms in a parmesan and matsutake shoyu broth, plus a raw-and-small section and heavier plates off the konro grill. Japanese technique, Latin American instinct. A Michelin Bib Gourmand and a 2022 James Beard semifinalist for Best New Restaurant. Regulars accept a favourite may never return.
